Pistachio Nougatine Ice Cream served with Lemon Meringue tart and Pistachio Creme Anglaise
Confession, this ice cream was made yonks ago. It was one of my favourite ice cream of all time, and seriously I don’t make it often enough. That’s because I have too many ice cream I want to make, and experiment with. As I was looking back at my old posts, I do realized I actually LOVE making ice cream. Cause for one, I actually bought a mini ice cream maker in Sydney in 2006.
So this, is an old recipe. But it works 😉 I’m pretty sure I’ll make this again..
100g crushed pistachio nuts
5g unsalted butter
Melt glucose and fondant. Cook till light brown. Add in pistachio nuts and butter and stir well. Remove from heat, pour onto silicon sheet and roll flat with a greased rolling pin. let it cool. Crush the pistachio nougatine. Cover till ready to use.
Ice Cream Recipe
100g egg yolks
15g pistachio paste
Bring milk and cream to the boil, infusing the vanilla flavour. Make slurry from yolk and sugar. Stir in slurry into milk and cream mixture, stirring with a whisk till the consistency is thick and coats the back of spoon. Add in pistachio paste. Seive mixture through into another bowl. Cool mixture in ice bath. Churn in ice cream machine according to ice cream machine’s manufacturer’s instruction. When ready, add in crushed pistachio nougatine and chill in freezer for4 hours or till set
Serve it plain, or with Lemon Meringue tart. That’s how I did it when I first made it. Lol.
