(Almost) Sloppy Joe Pancakes

Wendy from Table for 2… or more hosted a giveaway; that not just requires you to “like” or “Follow” anything or any other possible countable social network feeds. It requires a tad more effort and not purely based on luck. It may be a bit too late by the time you read this to join, as it’s the last day today and I think I’m only  a few hours away from closing time!!

Finally, I made an effort to make them!! HAha I’m not blaming anything or anyone except that I was just purely lazy and procrastinating 😛

So, in order to support Wendy, I woke up 45 mins earlier in the morning before I go to work and make the pancakes; so I can take some pictures, and pack it for lunch. I don’t even know what to label them as. Haha

I had the idea when I was browsing some food magazine. There was a sloppy joe, but there’s Japanese curry added to it. Of course it’s NOT a typical sloppy joe! If you see in my picture. It’s actually shredded chicken instead of minced meat.

KFC!!!

I’m not kidding. I REALLY wanted to get minced meat, but coincidentally, my parents brought back leftover KFC breast meat cuts, then I thought, OK LAR I SHALL USE IT!!!Ok you can stop laughing now ;P

So, it really doesn’t make it a sloppy joe. I’m all out !

But nevertheless, here’s the recipe. Please use minced meat by all means. You know, actually, apart from being a bit saltier, it’s actually quite nice! haha.

Sponge Pancakes

(adapted from Wendy)

1 egg
1 tbsp sugar
1Tbsp all purpose flour, sifted
Oil Spray or a bit of butter for frying
pinch of salt
1. Separate the eggs and beat egg whites until frothy and add in sugar and beat until medium stiff peaks (egg whites has a very droopy hook and doesn’t slide off the bowl).
2. Put in egg yolks and mix.
3. Add in flour, salt and fold into the eggs.
4. Heat a pan on medium and lightly spray pan with oil spray (Make sure you lift you pan and face somewhere else, not towards the stove)
5. Turn heat to medium low (very small fire on outer ring or just use low) and pour in the batter in 2 batches. It may look thick at first but it deflates a little later.
6.30 seconds later, flip to the other side. And cook till golden brown, or it’s not wobbly
7. Flip onto plate and serve. In this case, I used them in replace of burger buns

Filling

1 KFC original breastmeat (or 200g minced meat)

1 medium sized onion

20g Japanese curry roux (You can get the Jap curry premix in boxes)

100-150ml water or broth

2 tbsp ketchup

1/2 Japanese cucumber, sliced

1/2 tomato, sliced

a few lettuce leaves

1 slice cheese

Salt and pepper to season

1. Peel the meat and set aside. If you’re using raw minced meat, the method is the same, just takes a longer time to cook.

2. In a medium sized pan, heat with a bit of oil. Stir in onions. Let the onions sweat abit and turns a little translucent. Add in the meat. Toss.

3. Add in curry roux, water and ketchup and stir till well incorporated. It should be somewhat dry, but with a tad bit of sauce left. Season with salt and pepper if needed. It took me very fast to make it as I was already using cooked shredded chicken.

4. Assemble; put a layer of pancake, add cheese, lettuce, tomato, meat filling and cover with another layer of pancake. Cut cucumber into long strips and serve by the side.

I quite like the pancake, best part was, it’s easy to make! and no waiting time. It is a bit more eggy than regular pancakes, and lighter too!

Just remember the ratio of 1 egg : 1 tbsp flour : 1 tbsp sugar for 1 serving

  2. Wow! I’ve never seen anything like that before! I’m not gonna lie- when I heard the words “sloppy joe pancakes” I was totally grossed out, but that actually looks pretty darn tasty! 🙂
