Brunch Recipe : Parmesan Waffles with Mango & Avocado Salsa

Hey ho!

Since today is a public holiday, it means longer mornings and plenty of time to enjoy a good good breakfast or lunch. In recent months, brunch places are popping out around town like crazy! Scrambled eggs, eggs ben, french toast, big breakfast and all, but I hardly see any waffles. I quite like waffles especially used in savoury dishes (and also with some ice cream and fruits) I would probably prefer waffles to pancakes ;/

So I’m bored of making the regular brunch stuffs at home, I think things can be MORE than just scrambled eggs and omelet. Though they are the one of the skills any cook should master; cooking eggs perfectly well. Anyway, I decided to make savoury waffles for brunch!

If you do not add bacon, it can be easily a vegetarian option for those who want to keep it meat free.

For the salsa, I was just digging thru my fridge on what’s available. My mom bought back some Indonesian Avocado (the skin is less rough and the flesh is more brown) from Batam last week and also found a tiny Mango that is ripe, some leftover cherry tomatoes and coriander. That sounds like a good match already. Feel free to use Kiwi if you wish to.

Parmesan Waffles with Mango & Avocado Salsa
 
Serves: 4
Ingredients
Parmesan Waffle
  • 1 egg
  • 1 cup (250ml) milk
  • 1 cup (120g) self-raising flour
  • ½ cup parmesan (grated or shavings)
  • 50ml butter, melted (reserve about 5-10g)
  • pinch of salt and pepper
Mango Avocado Salsa
  • 1 small ripe Mago
  • 1 Avocado
  • 1 small onion
  • handful of coriander leaves
  • handful of cherry tomatoes
  • ¼ lemon
  • pinch of salt & pepper
Assemble
  • Fried Egg
  • Bacon strips
Instructions
Parmesan Waffles
  1. Crack egg in a bowl and lightly beat with a whisk or fork. Pour in milk and mix.
  2. Pour melted butter (reserve a little to coat the waffle pan) and parmesan and mix till combined.
  3. Add in self-raising flour, salt and pepper and mix with a whisk or fork. Let it rest in the refrigerator while you prepare the salsa
Mango Avocado Salsa
  1. Dice mango and avocado into 1-2cm cubes. Cut cherry tomato into half or thirds if they are big.
  2. Peel the skin off the onion, finely chop it, or cut to strips. Add everything into a bowl including coriander.
  3. Squeeze lemon juice, add in salt and pepper and toss. Let it rest in the refrigerator.
Assemble
  1. In a small pan, fry bacon. Once done, remove and let it rest on a oil-absorbent paper. Remove some of the oil and add it to the melted butter from the waffle earlier. Fry a sunny side up egg on the same pan.
  2. In the meantime, heat up waffle maker. Brush melted butter and or bacon fat.
  3. Pour in the waffle mixture and let it cook. Usually my waffle maker will indicate when it's done.
  4. Serve waffle with the salsa, fried egg and bacon.

Note: If you do not have a waffle maker at home, make pancakes instead! If you want to try to make simple brunch at home (to skip the spending outside) this is quite easy to make as it requires little stove top cooking.
