I just made this this morning and I can’t help but to put it up immediately. Nothing is posted up immediately after I cooked it, nor within the same or next day. It’s just a little cozy long weekend, no events in particular and just lazying around at home, watching TV and cooking yummy food!
I woke up this morning thinking of some pancakes. Ok honestly I don’t know whats the difference between hotcakes and pancakes. I think maybe, its just called differently in different countries. But I knew I had mushrooms and some beautiful large eggs in the fridge. It calls from a big breakfast! Since I didn’t have any bread for toasts or bacon (how is it possible!) for some greasy crispy fat, I decided to go with hotcakes instead, and luncheon meat aka spam.
Midway making these hotcakes, I decided to add matcha powder which I got from Taipei last year. Then I saw some very ripe bananas and decided. Ok hang on, make it more sweet instead.. I guess this is what watching Masterchef does to you. Inspired, all the time!
And yes, it’s a big breakfast ain’t it ? So there needs some scrambled eggs, mushrooms, tomatoes and caramelized onions ! The onions came in the last minute. Scrambled eggs is yummy by itself, but added some caramelized onions with balsamic glaze in it on top. YUM!!
So here’s the recipe for this hotcake. It can really, be altered, say maybe without matcha, or with some vanilla instead, or more milk ? So, make it tomorrow for a delicious Sunday brunch!!
- 1 Egg
- 3 tbsp sugar
- 1 tbsp oil or melted butter
- 130ml milk
- 3 tsp matcha powder
- 150g self raising flour
- 1 tbsp butter
- 1 banana
- 1 tbsp bourbon
- As much maple syrup
- Sift flour and matcha powder. Whisk eggs, sugar and oil in a bowl.
- Add milk, mix well. Add flour mixture and mix until smooth.
- Pour over preheat pan (low middle heat with some butter). Flip when they start to bubble.
- Slice bananas and cook them in butter. It should just be lightly caramelized on both sides, not too mushy
- Add bourbon and let it simmer a while.
- Pour on top of the hotcakes and drizzle with loads of maple syrup.
