Matcha Hotcakes with Caramelized Bananas with Bourbon
 
 
Serves: 2
Ingredients
  • 1 Egg
  • 3 tbsp sugar
  • 1 tbsp oil or melted butter
  • 130ml milk
  • 3 tsp matcha powder
  • 150g self raising flour
  • 1 tbsp butter
  • 1 banana
  • 1 tbsp bourbon
  • As much maple syrup
Instructions
  1. Sift flour and matcha powder. Whisk eggs, sugar and oil in a bowl.
  2. Add milk, mix well. Add flour mixture and mix until smooth.
  3. Pour over preheat pan (low middle heat with some butter). Flip when they start to bubble.
  4. Slice bananas and cook them in butter. It should just be lightly caramelized on both sides, not too mushy
  5. Add bourbon and let it simmer a while.
  6. Pour on top of the hotcakes and drizzle with loads of maple syrup.
