Baked Eggs in Avocado & Pancetta Chips
 
 
Serves: 1
Ingredients
  • 1 avocado
  • 1 egg (or 2, up to you)
  • 2 stripes pancetta
  • 4 white mushroom
  • 2 slices of bread
  • ¼ lemon (or lime) wedge
  • salt
  • pepper
Instructions
  1. Preheat oven to 190 C
  2. Cut the avocado in half, remove the seed. Use a spoon and scoop out some of the flesh (so the egg can fit) but not all of it.
  3. Squeeze in some lemon or lime juice (Lime would be a better choice but I only had lemon, so I used lemon) Sprinkle some salt and pepper.
  4. Place the avocado on a baking tray, crack the eggs into the 'well'. Bake for 10-12 minutes.
  5. Meanwhile, quarter the mushrooms. Heat olive oil in a pan and pan fry the mushrooms till it's soft. (about 4-5 minutes) Add some seasoning. Remove onto plate when it's done.
  6. Slice the pancetta (you can use bacon if you want) and pan fry on the same pan till it's crisp. Remove onto a paper towel to absorb some oil out.
  7. Slice bread and put it in the toaster, or oven, or panini press.
  8. Once egg is baked, remove from oven, sprinkle some salt and pepper. Serve with toasted bread, mushrooms and sprinkle over some crispy pancetta.
