Chicken Fettuccine with Pesto Sauce

I know it’s a little troublesome to change but otherwise, you wouldn’t know if I’ve updated, or died (lol) or went on a holiday… since I update “quite” often anyways. Plus, you don’t wanna miss the ice cream Mondays.

Ok, so, back to the post. If u see a normal square edge pic, means it’s old aka backdated! If you see a rounded corner edge picture with watermark on bottom left, it’s newer and what seems like “fresher” lol.

Chicken Fettuccine with Pesto

*I’ve only eyeballed the amount of ingredients I put inside. It’s totally up to you to adjust it if you plan to follow the recipe.

*serves 1

Pasta, I used fettuccine

2 strips bacon

1/2 chicken breast or boneless thigh without skin, cut to bite size strips

1/4 cup of frozen peas

2-3 tbsp pesto. You can make you own, from here

salt and pepper for seasoning

parmesan cheese

a few fresh sweet basil leaves

Olive oil

1. Bring a pot of water to boil. Add a huge pinch of salt. Add in paste and frozen peas. Cook according to package instructions.

2. Meanwhile, in a pan, fry bacon strips. You can cut into pieces of leave it whole. Remove bacon strips and set aside.

3. There are now some left over oil from the fried bacon. With that, heat up pan, a 1 more tbsp of oil, and add in chicken. Saute for a couple of minutes, add in pesto sauce. Stir.

4. Strain and add pasta and peas into pan. Toss with chicken and pesto sauce. Season with salt and pepper.

5. Serve on plate. Garnish with fried bacon and shaved parmesan cheese.

I usually buy parmesan cheese in whole cause you can shave it, grate it and even cut to cubes if you want to eat it just like that! If you keep properly in an airtight container, it keeps well.

  1. Hey, is this what you made on Tuesday morning before work? If only we work close to each other, like I said, can share our stuff!! HAHA! I’m a pasta person. I usually just eyeball as I cook, when compared to baking pastries, which is relatively different.

    HAHA! I see what you’ve done at your best to solve the issue. That looks good! I hope others will notice it. =)
