Roasted US Fingerling Potato

As this is one of my favourite dish during the recent US Potato Media Preview, I’ll share it with you and it’s something very simple anyone can make. If can be a side dish for your Christmas party, next to the majestic roasted turkey, or serve in a small dish to make it into a hor d’oeuvres. Just make sure don’t serve the garlic so big, otherwise you end up with bad breath the rest of the party Hahaha


Roasted US Fingerling Potato

Serves: 6
  • 1kg US Fingerling Potato
  • 30ml extra virgin olive oil
  • 60g garlic cloves
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 25g unsalted butter
  • 4g chili flakes
  • 20g feta cheese
  • 15g sundried tomato
  • salt & pepper to taste
  1. Preheat oven to 200 C.
  2. Clean the fingerlings. Cut the potato into half lengthwise into a bowl.
  3. Add garlic cloves, drizzle with olive oil, salt and pepper. Add rosemary and thyme sprigs, sundried tomato and chili flakes, toss to coat.
  4. Bake the potatoes for approx 20-25 mins or until golden brown.
  5. Remove from pan, toss with butter and feta cheese.
