So.. remember the apricot story, AGAIN ? HAhaha SEems too many apricot story, eh? After the ice cream, and the financiers, I still had a handful of apricots, say like 4-5 of them. Can’t bake with it as I would then need more than 4. So decided to do poached fruits. I’ve seen many poached peaches on MAsterchef Australia, so I got the idea of poaching apricots instead.
pardon the ‘soup’, I kinda warmed the panna cotta too much and by the time I added the apricots, it’s too late..
Panna Cotta is very easy to make. If you know how to boil water, u’d probably know how to make this. It’s an Italian dessert made with simmered cream and milk, gelatin, sugar and vanilla! Very easy and simple. It takes on many flavours especially with fruits, poached, jelly, coulis or as it is. While looking for panna cotta recipes, I came across Zen Can Cook, and it looks like the smoothest panna cotta ever. I just had to try it. And initially, it vanilla poached apricots to go with it. But ……
I made the panna cotta the night before. Strained out the vanilla pod, I left it on a paper towel so the cream dries off. Then I forgot. The next day when I wanted to look for it, it was g.o.n.e. Sigh someone must have thrown it away. So then I didn’t wanna use a new vanilla pod just to poach FOUR apricots. I decided to look for some ideas if there are any other things suitable to add in. Then came up to British Larder’s post on Thyme Poached Apricots. Ah!! I guess I should try it then, after all, I had thyme (there’s thyme in the house cause I made coq au vin.. not mysteriously just there without any reason) And well, you know, herbs don’t last that long and… I still haven’t get my hang on having green fingers yet. (Looks at rosemary plant, oh it’s still fine. !! Haha )
Vanilla Panna Cotta Recipe
(adapted from Zen Can Cook) . makes 3
1 1/4 cup cream
3/4 cup milk
3 tbsp sugar
1 1/2 teaspoons powdered gelatin
3 tablespoons cold water
1/2 vanilla pod
1. Sprinkle the gelatin over the cold water in a bowl and let stand 5 to 10 minutes.
2. Combine milk, cream, scrapped beans from vanilla pod and sugar in a saucepan and bring almost to boil. Stir with a whisk gently, not incorporating too much air. Turn off heat.
3. Melt gelatin over double boiler or microwave. Stir in gelatin until it has dissolved. Strain mixture into a jug or bowl.
4. Divide the Panna Cotta mixture into cups, then chill them until set. About 2 hours or more depending on the size of the cup. Recipe can be made up to 48 hours ahead until that point.
5.To unmold, dip the bottom of the cups in warm water for a few seconds and unmold on a plate. Garnish with fruits and coulis. Panna cotta can also be served directly in the cup.
Poached Apricot with Thyme
(adapted from British Larder)100g apricots, halved and stones removed
20g unrefined caster sugar
1/4 sprigs of thymeWash the apricots, cut them in half and remove the stones.
Place all the ingredients in a saucepan and cook for 10 minutes
Let the apricots infuse for one hour before use.
Smooth silky CREAMY panna cotta. Love love love!!!
Thyme with apricots. I may have been a bit heavy handed but I think I’d stick with vanilla next time 😉
